  • 2 sprigs of fresh thyme
  • 3/4 cup frozen peas
  • 1 teaspoon sea salt
  • Fresh cracked pepper
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sweet paprika
  • 4 cups vegetable broth
  • 1 large tomato
  • 1 1/2 cups Bomba Rice
  • 1 red bell pepper
  • 5 cloves garlic
  • 1 medium onion
  • 1 teaspoon saffron threads


  • In a small saucepan, insert vegetable broth.
  • In a 12-inch Paella Bowl, heat two tablespoons of oil and add the vegetables and spices.
  • Sauté until the vegetables are tender and golden brown.
  • Sauté for two minutes after adding the garlic.
  • Combine the onions, spicy paprika, and sweet paprika in a mixing bowl.
  • Cook for 1-2 minutes on high heat.
  • In the same pan, add the rice and the leftover 1 tablespoon of oil.
  • Put in the liquid slowly while adding the fresh thyme. Season with salt and pepper.
  • Reduce the heat to a low simmer.
  • Switch off the heat in the pan. Toss in the peas on top of the rice.
