- 2 sprigs of fresh thyme
- 3/4 cup frozen peas
- 1 teaspoon sea salt
- Fresh cracked pepper
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon sweet paprika
- 4 cups vegetable broth
- 1 large tomato
- 1 1/2 cups Bomba Rice
- 1 red bell pepper
- 5 cloves garlic
- 1 medium onion
- 1 teaspoon saffron threads
In a small saucepan, insert vegetable broth.
In a 12-inch Paella Bowl, heat two tablespoons of oil and add the vegetables and spices.
Sauté until the vegetables are tender and golden brown.
Sauté for two minutes after adding the garlic.
Combine the onions, spicy paprika, and sweet paprika in a mixing bowl.
Cook for 1-2 minutes on high heat.
In the same pan, add the rice and the leftover 1 tablespoon of oil.
Put in the liquid slowly while adding the fresh thyme. Season with salt and pepper.
Reduce the heat to a low simmer.
Switch off the heat in the pan. Toss in the peas on top of the rice.
