Preheat the oven to 400 degrees Fahrenheit.
Toss potato in canola oil and season with salt and pepper.
Position on a cookie sheet in a single sheet.
Cook for 25 to 30 minutes until its fork ready.
In a spice grinder, puree the vegetables to make the sauce.
Add the oil to a pan.
Garlic and jalapeno peppers should be added at this stage.
Insert pureed onions, cayenne pepper, salt, and pepper until the onions have softened.
Combine the garlic, lime juice, and egg white in a mixing dish.
Beat the egg yolks with an immersion blender until they are light in color.
Continue to beat until it thickens into a sour cream texture.
Mix in the salt until it is well combined.
